Aside from about an hour when my kids geared up and played in the nearly a foot of snow that was still flying, we had an absolutely disgustingly domestic day, full of laundry, homework and snuggling. On a day like this when inside is warm and toasty and outside is just NASTY, I’m making stew…
ORGANIC LAMB STEW
4 lbs of lamb, cubed,
4 onions
a whack of garlic
butternut squash, carrots, asparagus, shitake mushrooms, celery, eggplant
herbs such as savory, thyme, pepper, salt, parsley, bay leaf, allspice, oregano and chili powder
about a bottle or so of red wine
a cup or so of vegetable stock
4 hours or so of simmering
splash of garlic/chili oil
splash of Tamari
splash of olive oil
I start by softening the 4 onions in olive oil and garlic, then I added some of the veggies – carrots, celery – until everything was tender. At that point, I dumped in the lamb and let everything brown a little. Next, I added the 3 cups or so of wine, the stock and the herbs and spices, covered the pot and tried to ANYTHING done while the scents wafted and drove me batshit. Still driving, in fact.

I made a big old pot of spaghetti sauce. My sister’s coming for dinner tomorrow, and she’s requested stuffed shells. I usually don’t eat the sauce the same day I make it, but I was too lazy to make anything else….
Mmmm…Mama! That sounds fantabulous! I went with the good ol’ chicken parm, with last minute homemade sauce.
We had chili today for the same reasons.

I was tired. It was good.
Anytime any of you want to come for supper, let me know; I made enough stew for a football team, as per usual. ANd for the record? It came out phenomenally.
